Where It All Began — A Journey Rooted in Curiosity

Fifteen years ago, compelled by a deep reverence for nature and flavor, I set out across the Mediterranean coast of Turkey — not by highway, but by heart. Village by village, grove by grove, I traced the forgotten olive cultivars of Anatolia, seeking to unearth flavors long hidden from the world.

But amid these discoveries, a paradox emerged: the most extraordinary olives were often grown in the most remote places — far from quality mills, their brilliance threatened by delay. It was clear: if I wanted to honor the fruit’s full potential, I had to bring the mill to the grove.

Olive oil is, quite simply, a fruit juice. And like any fresh-pressed juice, its nutritional value—particularly its antioxidant content—depends on how quickly and how gently it’s extracted. Among these antioxidants, polyphenols stand out for their scientifically proven benefits: reducing inflammation, supporting heart health, and enhancing overall wellness.

While the cultivar of the olive matters, what’s even more critical is the time and technique of production. The shorter the window between harvest and pressing, the more vibrant, flavorful, and nutrient-rich the oil.

Unfortunately, in most olive-growing regions—including California—olives are typically transported to distant factory mills, often sitting for 12 to 24 hours or more before processing begins. During this time, the olives begin to degrade, compromising both quality and nutrition.

In what we believe is one of the most exciting food projects in recent years, we designed, financed, and built a state-of-the-art mobile olive mill—equipped with world-class Mori-Tem extraction machinery imported from Tuscany. In October 2019, we launched The Olive Truck, a revolutionary mobile facility capable of pressing up to 500 kg of olives per hour, directly in the groves.

By driving into the olive orchards and cold-pressing within moments of harvest, we capture the true essence of California’s finest olive varieties—bottling extra virgin olive oil at its absolute peak of freshness, flavor, and polyphenol richness.

Our mission is simple: to produce the freshest, healthiest, and most flavorful olive oil possible—where purity meets innovation, and tradition meets the road.
